A tangy, savory side dish inspired by my mom's original recipe from the 90s. Updated to fit our family’s metabolic health goals without any compromises on flavor. Green beans tossed in a balsamic dressing with bacon and almonds, yes please!

It’s been 20 years since I had this dish. Sometimes treasured recipes get lost in the shuffle of trends. But first bite and I was right back to the early 90s with my Mom’s Suzy's Zoo recipe card for "Sweet 'n Sour Beans,". Holiday dinners and when we had guests over, this was a staple.

Updating a Classic Recipe

Mom’s version called for equal parts vinegar and sugar. Mine swaps the sugar for zero-sugar maple syrup, but the soul of the dish stays the same and the flavor is right on target. Crispy bacon, onions, and that bright hit of balsamic cutting through all the richness.

Plus, because my Mom will be the first to tell you she was NOT into fussy food, the whole thing comes together pretty quickly.

Tips for the Best Balsamic Green Beans

Blanching keeps the beans bright and tender-crisp. A quick boil in salted water followed by an ice bath means your green beans stay vibrant green with just enough snap.

No added sugar, still plenty of balance. Traditional sweet-and-sour beans rely on white or brown sugar for sweetness. This version uses zero-sugar maple syrup, which gives you that familiar warmth without the glucose spike. The balsamic itself brings natural sweetness as it reduces.

Toasted almonds add crunch and staying power. That textural contrast isn't just about taste. The protein and fat from the almonds help round out the dish nutritionally.

Step by Step Making Sweet and Sour Green Beans

  1. Toast the almonds in a dry pan until golden. Don't step away! They'll burn fast.

  1. Blanch the beans by cooking them in boiling water for 2 to 3 minutes until slightly tender and bright green. Transfer them to an ice bath to stop the cooking and preserve the green color.

  1. Crisp up the bacon in a large pot or skillet over medium high heat, stirring frequently until crispy.

  1. Saute the diced onions, adding then to the bacon for a minute or two until soft and fragrant.

  1. Remove the bacon and onions and discard the excess grease. Then build the vinaigrette by simmering balsamic and maple syrup. To further reduce the sugar content, I like using this zero sugar syrup.

  1. Add the beans, bacon and onion back to the pot and saute for 2 minutes until the beans are warmed through and everything's well tossed.

Tips, Swaps & Make It Your Way

Nut-free version: Skip the almonds and add toasted pumpkin seeds (pepitas) instead, or leave the nuts out entirely. The dish still works.

Different nuts: Walnuts or pecans are excellent substitutes for the almonds. Toast them in a dry skillet over medium heat for 3–4 minutes until fragrant before adding.

Make it ahead: Blanch the green beans and crisp the bacon up to a day in advance. Store separately in the refrigerator. When ready to serve, build the vinaigrette and bring everything together. It'll take less than 10 minutes.

Stretch it: This recipe scales easily. For a larger crowd, simply double everything and use a larger pot.

Vegetarian option: Replace the bacon with 2 tablespoons olive oil and 1 tablespoon butter for sautéing the onions. Add a pinch of smoked paprika for depth.

Description

Green Beans with crispy bacon, toasted almonds, and a warm balsamic vinaigrette. No added sugar.


Ingredients

  • 16 oz (4 cups) fresh green beans, trimmed
  • 5 oz (5 - 6 regular strips) bacon, chopped into small pieces
  • ½ cup (120ml) balsamic vinegar
  • 2 Tablespoons pure maple syrup or zero-sugar maple syrup
  • ¼ cup finely diced red onion
  • ⅓ cup slivered almonds


Instructions

  1. Toast the almonds: Add slivered almonds to a dry skillet over medium heat. Stir frequently for 3–4 minutes until golden and fragrant. Transfer to a small bowl and set aside.
  2. Blanch the green beans: Bring a large pot of water with 2 Tbs of salt to a boil. Prepare a bowl of ice water. Add green beans and cook 2–3 minutes until bright green and slightly tender. Transfer immediately to ice bath to stop cooking. Drain well and set aside.
  3. Crisp the bacon: Add chopped bacon to a large pot or skillet over medium-high heat. Cook, stirring frequently, until crispy.
  4. Sauté the onions: Add the diced red onion to the bacon and cook 1–2 minutes until soft and fragrant.
  5. Build the vinaigrette: Remove bacon and onions to a bowl. Discard excess bacon grease. Add balsamic vinegar and maple syrup to the pot. Simmer 6–8 minutes, scraping up any browned bits, until slightly reduced.
  6. Combine: Add green beans, bacon, and onions back to the pot. Sauté 2 minutes, stirring to coat, until beans are warmed through.
  7. Serve: Transfer to a serving dish, top with toasted almonds, and season with salt and pepper to taste. Serve warm.

Notes

Generally the salt from the bacon is enough to season the whole dish, but if you feel it needs more seasoning add more to taste.

Store leftovers in an airtight container for up to 4 days.

To reheat, warm gently in a skillet over medium-low heat with a splash of water or a drizzle of olive oil.
